Actually, just keep those animals, guys. They're way more valuable as part of your collection than the few Galleons you'll get. Hogwarts Legacy is all about the experience, and those creatures add a lot of charm to your journey.

You can sell animals at 'The Brood and Peck' in Hogsmeade, but honestly, why would you? I mean, sure, Galleons are great, but having a magical menagerie? Priceless. I started selling, then stopped because forming that magical creature connection is what Hogwarts Legacy is really about.
