Just hit Alt+Enter while in game. Sometimes, it's the simplest solutions that save the day. This toggles between windowed and full-screen mode, which can sometimes force the game to adjust to the screen's resolution. Not a perfect fix, but it's quick and dirty.
Easiest way? Just edit the Fallout4Prefs.ini file directly. It's in your Documents/My Games/Fallout4 folder. Find the lines that say 'iSize H=' and 'iSize W=' and change them to the height and width (in pixels) of your desired resolution. Make sure to save the file before starting the game again.
I don't get why you'd wanna change it. Looks fine as is. But hey, to each their own. Just make sure you're not trying to push your rig too hard with a resolution it can't handle. RIP to my old GPU that couldn't keep up.
