I've asked a judge to shuffle for me at a big tourney. No issues at all. They were super cool about it and even encouraged it if it meant we'd feel more comfortable. Always worth asking if you're not sure.
Yeah, you can, but why? Just shuffle your own deck and have your opponent cut it. Trust is key in MTG. Keep the game flowing!
