In my experience, nothing is more heartbreaking than watching your shiny vehicle card get blown up after you just turned it into a creature. So yes, they can 'die' if you're not careful.
Yep, vehicles in MTG can definitely 'die' or be destroyed just like any other creature once they've been turned into creatures! This usually happens when you activate their ability to become creatures until end of turn. So, if your opponent has something that can destroy a creature or if they deal enough damage to it in combat, say bye-bye to your vehicle.
