Actually, you CAN adapt the same creature more than once in MTG, but only under certain conditions. If a creature loses its +1/+1 counters somehow (think effects that remove counters or bouncing it back to your hand and replaying it), you can adapt it again since it technically doesn't have any +1/+1 counters on it at the time of the second adaptation. But straight up, if it's got counters on it, no double-dipping on the adapt action.

Nope, you can't adapt a creature more than once if it already has any +1/+1 counters on it. The adapt ability specifically states that if the creature has no +1/+1 counters, you can pay the adapt cost to put X +1/+1 counters on it. So, once you've adapted and those counters are there, you're outta luck trying to adapt it again!
