Nope, you got it wrong. Once you declare it as a blocker, tapping it doesn't remove it from combat. It's like saying "I block with this creature, and now I'll also do something else with it." MTG rules allow for some pretty interesting strategies!
Actually, it's not about defending then tapping. It's more like, tap it if you want, but it has to be untapped to block first. After that? Tap away for whatever cunning plan you have!
