How does defending multiple creatures work in MTG?
When you're the defender in Magic The Gathering and you're being attacked by multiple creatures, you actually get to choose how your creatures block the attackers. Each of your creatures can block only one attacker each turn, but multiple creatures can gang up to block a single attacker if you think it's necessary. Just remember, each creature on your side can only commit to one block or attacker per combat phase!

Just to keep it simple: one creature you control can block multiple attackers if it has an ability that allows it to do so (like 'Menace' but for blocking), but usually, you're assigning one blocker per one attacker. Some cards change these rules, so always read the abilities of your creatures!
Honestly, it's all about the cards. Some creatures can block more than one attacker, but that's a special case. Standard rule? One on one unless your creature says otherwise.
