Monstrosity in MTG is a cool mechanic where you pay a certain amount of mana to make a creature you control bigger and badder. Once you pay the mana cost and activate the monstrosity ability, you put a specified number of +1/+1 counters on the creature. But the catch is, you can only do it once! Once a creature becomes monstrous, it can't become monstrous again, no matter how much mana you have burning a hole in your pocket. It's a great way to surprise your opponent with a sudden boost in creature power!

It's basically like hitting the gym for your creatures. Pay the cost, get swole with +1/+1 counters. But remember, no double-dipping in the monstrous gains!
