Each land tapped adds a specific color of mana to your pool. Then, you spend that mana to cast spells or activate abilities. Honestly, the mana pool complicates things more than needed. Just tap your lands when you want to play something and make sure you have the right colors. If you end up with extra mana, you're probably doing it wrong.
