Just attack their strategy directly! Use cards that say 'players can't gain life' or something that deals damage based on their life total. Simple and effective.

As someone who's played against life gain decks a lot, I've found success with infect decks. They basically ignore the opponent's life total by dealing damage in the form of poison counters. 10 poison counters and it's game over, no matter how much life they've gained!
